Aligator Soiree LTC The photos are from the LRA Expo Aug. 4 at the La. Seafood Promotion Board's "Alligator Soirre". The LTC Students came in 4th place. The students are Joshua Di Maggio, Thomas Wiendel, Jennifer Pacaccio, Katie Ragan, Stacey O'Brien, and Chef Jan Rost. They Prepared "Cocodrie Three Ways" as an appitizer, and sauteed alligator with red bean and popcorn rice with grilled veggi kabobs.

Joshua Cormier, CC, a recent Delgado Culinary Arts graduate, will represent the New Orleans Bailliage of the Châine des Rôtisseurs at the Southwest Jeunes Commis Competition (young chefs) in San Antonio, Texas on March 12 -13.

The competition is a mystery basket format.  Chef Josh placed second at the 2009 Jeunes Commis Competition.  The winner of the Southwest competition will compete on the national level in Bellevue, Washington on May 20-25.  The international competition is scheduled

On Sunday, July 19 at the Louisiana Restaurant Association Expo, four Culinary Arts teams competed in the Alligator Soiree. Delgado Community College (DCC), Louisiana Culinary Institute (LCI), LTC Jefferson (LTC) and Sowella Community College were the schools competing. LCI placed first, DCC placed second and LTC placed third.

The teams prepared an appetizer and an entrée in 1 hour and 45 minutes with alligator being the predominant ingredient. All the teams knew that the center of the plate was to be alligator but each team had a different presentation, including Asian, Italian and All-American. All teams were judged by foodservice professionals under certified rules.

Knowledge Bowl

The Knowledge Bowl team garnered a silver medal at the ACF Central Regional conference. The team consists of Francis Strayham, Wanda Schmidt, Eric Mark, Joshua Cormier and Ray Yakelis. Under the direction of Coach Nancy Burback, CEC, CCE
