Minutes of September 27, 2004 Meeting
-
Chef Jon Petrie called the meeting
to order and introduced the chapter officers.
• Pledge of Allegiance
• Culinarians Code
• Chef Mike Roussell of Brennan’s Restaurant
suffered a heart attack, Liz Walden, wife of Chef
T. Walden suffered a stroke and Norman Key
had an accident that crushed both heels. Please keep these
members in your thoughts.
• LTC school update – 5 ½ weeks
into the semester, the hurricane set progress back a week,
LTC participated in a gourmet gala for the group home
for children at K Bar B, New instructor on campus is Kevin
Foil.
• Delgado school update - Accepted 68 new
culinarians and 10 pastry arts students, the new faculty
member for Pastry Arts is Chef Jon Petrie.
• Nunez school update – Gala coming
up on October 16, ticket price is $35
• Chef and Child Foundation – national
charity that ACF focuses on the nutritional issues for
needy children, this year locally will be “Naturally
Nawlin” at Jean Gordon food festival, set
up demo and talk about sanitation on Nov. 6.

• Chef of Year nominations – dinner
will be Dec. 12, the nomination process – must be
a member in good standing, an active member, and certified
by ACF, nominations are until October 18, must submit
a brief bio.
• Chef Jon officially opened floor for nominations.
• The chapter enjoyed a wealth of visitors and speakers
at the September meeting- Kelly and Abide, Howell Farms,
Burgundy & Al Olivier, Southern Sales, LA Cookin’
magazine, and Delectable magazine.
• Carl Howell of Howell Farms spoke about
their crops. The Farms raises produce all year long. They
have 14 green houses and 6 more in production.
